Caramelized Onion Dip

Caramelized onions–in the crock pot?! I didn’t believe it either but it’s true. I did mine overnight and woke up to a house smelling of the best chemical reaction ever. And then I made dip with them. I’m getting Super Bowl food-ready a weekend early.

It doesn’t really take much besides some onions, butter, and olive oil. Ready?!
4 or 5 large onions diced or in half rings (or enough to fill the crock pot. It works best when it’s pretty full.)
3 tbsp Olive Oil
1 tbsp butter
Add everything to the crock pot, set on high for 6 hours, stir occasionally.

I did mine on low because 1) I was going to be sleeping and if they were going to burn I wanted to minimize the damage and 2) I only had 3 medium onions. Still they came out great and caramelly and ready for the dip.

The Dip
This one is pretty easy too. Mix together 5 ingredients:

Caramelized Onions
1/2 cup homemade mayo
1 cup Sour Cream or Greek Yogurt
Cayenne
Paprika
Salt and Pepper to taste

Mix, let sit, enjoy. Bagel chips are mighty fine with it, if going through the entire bag in one sitting tells you anything. We ate all the bagel chips and dip in…about 5 min. Don’t make this unless you’re looking to do the same!

    the whole onions in the crockpot would be an ideal shortcut to some fantastic French Onion Soup. Just add some good beef stock and cracked black and you’re ready for the bread and cheese. Ok, gotta try it. Your Mom will let you know how it comes out.
