Coconut Macaroons with Lime

Yesterday was Sunday Bakeday so I made these little coconut treats that are a cinch. I’ve been craving coconut for a while and when I saw a bag of it at the store I grabbed it, not knowing what would come of it. This weekend was a busy one first with a birthday celebration and then  my parents coming in to town. For our friend Sara’s birthday -who loves anything chocolate and peanut butter- we made a no-bake chocolate peanut butter pie. It was decadent, but maybe overly so. It was rich and creamy and delicious but more than just a few bites put you into a sugar coma that lasted the rest on the weekend. Believe me. That pie will probably last her another 3 weeks at least.

My parents also came down this weekend and we went out to lunch and had a grand time, as always. My mom had some heartbreaking news that has affected me in various ways. I’ve been trying to stay positive and send all my positive thoughts her way because she will need them. If you have any to spare please, send them her way. It’s a difficult time for all of us now and any little thing will help. I can’t put into words how much my mom means to me and how great of an impact she has made on my life. She is hands down the best person I know.

After lunch with my parents we went to Sahara Mart (the best grocery in Bloomington) and picked up some really great items (like pink salt and whole hazelnuts!). I wasn’t in the mood to put a lot of labor into anything so I pulled out my cookie and biscuit bible and found this little gem. After a weekend of mass destruction I wanted something that could hold its own and store fairly well for when my sweet tooth came back around. I cut this recipe in half so I didn’t overload our household with sweets and it made as many as the full recipe estimated! I also added lime to the actual coconut mixture instead of just the icing to give it a bit more tang. All in all they hit the spot for simplicity of assembly. I just had one to see if they would hold up the next day and while they lost a little bit of crunch they were still tasty. I recommend these if you need to get a quick coconut fix.

Even twelve cookies is too many this week.

Coconut and Lime Macaroons
Adapted from the Cookie and Biscuit Bible

  • 4 Large egg whites
  • 3 cups sweetened coconut (dry)
  • 3/4 cup granulated sugar
  • 2 tsp vanilla extract
  • 1/4 cup all-purpose flour
  • 1/2 cup confectioners sugar
  • grated rind of 1 lime
  • 4 tsp lime juice
  • 1 tbsp pistachios, chopped
  1. Preheat the oven to 350. Line two baking sheets with baking parchment (or use a silpat).
  2. combine the egg whites, sugar, coconut, vanilla, grated lime and flour in a heavy bottomed pan. Mix well.
  3. Place over a low heat and cook for 6-8 minutes, stirring constantly to make sure it does not stick. When the mixture becomes the consistency of thick oatmeal, remove from heat.
  4. Place spoonfuls of the mixture in rocky piles on the baking sheets. Bake for 12-13 minutes, until golden brown. Let cool completely.
  5. To make the icing, mix the confectioners sugar and lime juice together until smooth. drizzle over the cookies. Add chopped pistachio on top.
